Better than both is Kershaw's Shun line. They're the same knives Alton Brown uses and are made in Seki City, Japan, a city known for its knife and sword making traditions. Kershaw Shun knives are sharper than the german brands, and are made by folding steel 32 times so that the edge is extra hard and sharp. They're also beautifully balanced and finished.
You can see them at any fine cutlery store like Williams Sonoma. Henckels 5 star and Wusthof are both good but not even in the same league. They shouldn't even share a case with the Shun knives. Get the Shun, they cost about the same if not a little less and are much better.
